For an introductory course, I like Lippard and Berg's book. It's written at a pretty nice undergraduate level. For a more advanced class, there is Physical Methods in Bioinorganic Chemistry that gives a good survey of lots of spectroscopic techniques as applied to bioinorganic.
I used Kaim, Schwederski, and Klein (published by Wiley) and coupled it with primary literature for an upper-division seminar-style course and it worked well.
